Sips has established itself as a pilgrimage site for cocktail enthusiasts, recognized globally and consistently ranked among the world's elite bars. Founded in 2021 by Marc Álvarez and Simone Caporale, this Barcelona bar reimagines the cocktail experience through theatrical presentations, technical precision, and storytelling that transforms each drink into a narrative. The open island prep space eliminates the traditional bar counter, turning the bartenders' craft into performance art, while the Esencia tasting menu offers a multi-course journey through liquid innovation at prices that belie the haute couture approach.
Book the Esencia tasting menu in the back room for the full narrative arc—it's a 10 or 15 course journey that reveals the depth of their creative philosophy beyond the à la carte hits.
Marc Álvarez honed his craft within Albert Adrià's elBarri Group, absorbing the boundary-pushing philosophy that defined Barcelona's avant-garde culinary movement. His partner Simone Caporale earned International Bartender of the Year in 2014 while presiding over Artesian at London's Langham Hotel, where he built a reputation for technical rigor and creative reinvention of classics. Together they founded Sips with a shared vision: to strip away bartending orthodoxy, center the craft within open sight, and build cocktails that tell stories through flavor, aroma, and presentation rather than relying on gimmicks.
Four dimensions, each assessed independently against the same criteria everywhere we rate.
While cocktails reign supreme, Sips offers carefully curated small bites designed to complement the liquid program without competing for attention. The snacks serve as palate cleansers and flavor bridges between drinks, executed with the same precision mindset that governs the cocktail development. Think of them as garnish elevated—thoughtful, restrained, and purposeful in supporting the main event.
The atmosphere skews dark, moody, and electric, with dim lighting that creates theatrical intimacy around the central island where bartenders orchestrate their craft. Music stays at conversational levels despite the energetic buzz, and the seating arrangement—tables and high-tops encircling the prep station—fosters a gallery-viewing dynamic where guests become audience to precision mixology. Expect a sophisticated, trend-conscious crowd that appreciates both Instagram moments and genuine craft.
The team operates with warmth and expertise, balancing attentiveness with space to let guests absorb the experience. Bartenders engage directly with guests, explaining techniques and ingredients without pretension, while floor staff manage the flow seamlessly—they'll even freeze your drink while you step away. Reservations are strongly encouraged, though walk-ins after 8pm sometimes find luck with patient, accommodating hosts who set clear expectations.
Sips abandons the classic bar counter in favor of a central island format that positions the bartenders as performers and guests as encircling observers. The design reads modern and sleek, with a backbar that complements rather than dominates, and lighting calibrated for mood without sacrificing visibility of the craft. Located on Carrer de Muntaner in Eixample, the space feels deliberately intimate, rejecting grandeur for focused, almost laboratory-like elegance where every sightline connects to the liquid theater.
These four dimensions are a handful of the attributes we review. The Insider Rating also draws on research the compass does not display — among them the wine programme, the size and quality of the cellar, the location, and how long the house has operated. It is not an average of the scores above.
