About Sala de Corte

Sala de Corte stands as Lisbon's premier steakhouse, where chef Luís Gaspar applies classical French technique to Portugal's finest aged beef, all grilled over open fire in a Josper oven. Situated prominently on Praça Dom Luís I since 2015, this polished dining room has earned its reputation through meticulous in-house dry-aging and an obsessive focus on provenance—every cut traceable to certified producers. The open kitchen lets you witness the brigade at work, from tableside tartare preparation to the precise searing that delivers steaks with proper crust and blushing interiors. It's for carnivores who understand that great meat cookery is about sourcing, aging, and fire management in equal measure.

Good to know

Ask to see the aging cabinet and discuss cuts with your server before ordering—they'll walk you through provenance, aging time, and can tailor recommendations to your preferred fat content and flavor intensity.

The chef

Luís Gaspar

Luís Gaspar trained at Escola Profissional de Leiria before honing his technique under Aimé Barroyer at Pestana Palace and the acclaimed Henrique Sá Pessoa at Cais da Pedra—two chefs who instilled rigorous French foundations and modern Portuguese sensibility. He further refined his credentials at Escola de Hotelaria e Turismo de Lisboa, studying culinary management and production, with stages at York House and 1300 Taberna rounding out his formation. His approach at Sala de Corte reflects this classical training: obsessive sourcing, respect for provenance, and letting quality aged beef speak through proper fire management rather than unnecessary embellishment. Gaspar's philosophy centers on transparency—showcasing the raw product, aging it in-house, and applying heat with precision.
