About Rijks

Nestled in the Philips Wing of the Rijksmuseum, Rijks has become a defining voice in modern Dutch gastronomy under chef Joris Bijdendijk, who champions the 'Low Food' movement with an unwavering focus on produce from the Low Countries. The one Michelin-starred kitchen operates with theatrical transparency through an open brigade layout, allowing diners to witness the precision and creativity that goes into each dish. With its devotion to Dutch terroir and seasonal ingredients—complemented by a wine program exclusively featuring bottles with ties to the Netherlands—Rijks offers a culinary experience that feels both deeply rooted and refreshingly progressive.

Request the Rijkstable if it's available—seated directly at the chef's counter, you'll get the best view of the brigade in action and often benefit from extra attention and explanation of techniques.

The chef

Joris Bijdendijk

Joris Bijdendijk cut his teeth at Ron Blaauw Restaurant before traveling to Le Jardin des Sens in Montpellier and returning to helm the kitchen at Bridges at The Grand Hotel. His trajectory has been marked by consistent recognition, earning Gault & Millau Young Chef of the Year in 2014, the prestigious SVH Master Chef title in 2017, and most recently Gault & Millau Chef of the Year 2025. Bijdendijk's cooking philosophy centers on the 'Low Food' movement—a celebration of Dutch terroir and produce from the Low Countries—executed with technique that elevates humble ingredients to star status while fostering dialogue with guest chefs from around the world.
