About Restaurante Japonés

At this intimate Michelin-starred Japanese counter in Valencia's Eixample, chef Yoshikazu Yanome serves just ten diners per service in an omakase experience that bridges Edomae tradition with Mediterranean waters. Trained and licensed by the All Japan Sushi Association with over a decade cooking in Japan, Yanome brings the precision of Tokyo's sushi culture to the exceptional red prawns, anchovy, and cuttlefish of Spain's coastline. The minimalist, serene setting designed by Mikiya Kobayashi puts the focus squarely on the chef's knife work and the purity of each nigiri. This is destination dining for those who understand that great sushi begins with impeccable sourcing and ends with restraint.

Good to know

With only ten seats per service, booking well in advance is non-negotiable—this isn't a walk-in kind of place, and the intimate format means tables turn only once per service.

The chef

Unknown

Yoshikazu Yanome arrived in Spain with a rigorous foundation: a degree in Economics, formal training from the All Japan Sushi Association, and over ten years cooking in Japan before crossing continents. He honed his skills further at Zenart restaurant in Málaga before opening his own counter in Valencia. His cooking philosophy centers on respect for the fish—sourcing the finest Mediterranean catch and treating it with the restraint and precision of Tokyo's sushi tradition, allowing terroir and technique to speak without distraction. In 2024, the Japanese government named him ambassador of goodwill for Japanese cuisine, a recognition of his role in preserving and elevating authentic sushi culture abroad.
