About Restaurante Alevante

Alevante is Ángel León's more intimate expression of his marine revolution, set within the Gran Meliá Sancti Petri and offering a distilled version of the philosophy that has made him globally renowned as "The Chef of the Sea". Holding 2 Michelin stars and 2 Repsoles, this is where León's groundbreaking work with sea vegetables, plankton, and Atlantic species meets refined elegance—a seafood tasting menu that challenges convention while honoring the Cádiz coastline. It's for diners ready to embrace a deeply marine experience, where every course explores the forgotten potential of the ocean with creativity and scientific rigor.

Good to know

If you're new to León's work, start here rather than Aponiente—Alevante distills the essence of his marine philosophy into a more accessible format without sacrificing complexity.

The chef

Ángel León

Ángel León is a self-taught provocateur who has spent his career rehabilitating the reputation of overlooked marine species and pioneering the use of sea vegetables and plankton in haute cuisine. After training at Aponiente, his flagship in El Puerto de Santa María, he's become a global ambassador for marine gastronomy, earning recognition from the FAO (Food Hero) and the Special Science Prize at The Best Chef Awards for his research into sustainable ocean ingredients. His philosophy is rooted in respect for the sea's biodiversity, rediscovering forgotten species, and proving that the ocean offers far more culinary potential than the handful of fish dominating menus worldwide.
