About Restaurant Napicol

Chemo Rausell's Bib Gourmand countryside retreat sits in the heart of Valencia's huerta, where an organic garden supplies the kitchen just steps from the stove. The cooking is deeply Valencian—market-driven plates that honor traditional technique while celebrating the terroir of the surrounding farmland, from benchmark rice dishes to escabeches that showcase the region's produce. This is a family-run operation where nothing feels forced: no set menu, just seasonal à la carte offerings and off-menu specials that change with what's ripe, caught, or ready to harvest.

Good to know

Call ahead to pre-order rice if it's what you're after—the kitchen needs notice to execute properly, and showing up hoping for paella will leave you disappointed.

The chef

Chemo Rausell

Chemo Rausell cut his teeth at Gula, his first restaurant, before establishing Napicol as a love letter to Valencian terroir and traditional technique. His approach centers on hyper-local sourcing—the organic garden adjacent to the dining room supplies much of the vegetable backbone—and a refusal to compromise on product quality, whether it's dayboat fish or heritage poultry from trusted suppliers. Rausell earned Bib Gourmand recognition for cooking that respects the region's culinary heritage while avoiding museum-piece nostalgia, focusing instead on proper execution and seasonal availability. The kitchen operates without a fixed menu, allowing Rausell to respond to what's ready in the garden or arriving from market that morning.
