About La Sastrería

La Sastrería occupies a former tailor shop in the maritime neighborhood of El Cabanyal, where chef Sergio Giraldo serves stunning Mediterranean market cuisine focused on the daily catch and seasonal produce. The Repsol Sol-recognized kitchen balances traditional Valencian technique with creative precision, serving both informal tapas at the bar and composed plates in the dining room beneath a sculptural ceramic wave. Trained at Luis Irizar Culinary School and under Martín Berasategui, Giraldo brings serious technical chops to a neighborhood restaurant that's become essential eating in Valencia. Book ahead—the design-forward space draws devoted regulars and curious visitors alike.

The chef

Sergio Giraldo

Sergio Giraldo trained at the prestigious Luis Irizar Culinary School in San Sebastián, logging critical stages under Martín Berasategui and with Subijana before working at Las Rejas with Manuel de la Osa and stints at Q-tomas and Marina Beach. His cooking philosophy centers on daily market sourcing and Mediterranean ingredients, applying refined technique learned in Spain's northern culinary temples to the seafood and produce of Valencia's coast. Since opening La Sastrería in 2020, he's built a kitchen that honors Valencian tradition while pushing creative boundaries, earning a Repsol Sol for his efforts. The approach is clear: let exceptional ingredients shine through precise execution and judicious creativity.
