An expert assessment built on data, context and gastronomic judgement.
Delta represents a bold evolution in modern Greek cuisine, where chefs Thanos Feskos and George Papazacharias merge Scandinavian technique with Hellenic terroir in a stunning fifth-floor space at the Stavros Niarchos Foundation Cultural Center. The kitchen operates with a zero-waste ethos, crafting 10- or 14-course tasting menus that draw on ingredients from their organic farm in Mesogeia, less than 50 kilometers away. Recognized with 2 Michelin stars and a Green Star, this is ambitious, terroir-driven cooking that has earned a devoted following among those seeking Greece's most progressive fine dining.

Thanos Feskos honed his craft as Assistant Head Chef at Geranium, the legendary 3-Michelin-starred restaurant in Copenhagen, where he absorbed Rasmus Kofoed's obsessive approach to seasonality, fermentation, and zero-waste cooking. Partnering with George Papazacharias, Feskos has translated that Nordic discipline into a distinctly Greek context, building relationships with farmers and fishermen to source hyper-local ingredients within a 50-kilometer radius. Their philosophy centers on terroir, sustainability, and technical precision—every element on the plate is intentional, every byproduct repurposed, every sauce a study in balance. The duo's work has positioned Delta as a beacon of new Greek gastronomy, merging international training with deep respect for Hellenic ingredients.
Four dimensions, each assessed independently against the same criteria everywhere we rate.
Feskos brings Geranium-level precision to Greek ingredients, employing fermentation, aging, and Nordic preservation techniques to coax unexpected depth from local produce and seafood. The cooking is ingredient-obsessed and waste-conscious—every part of the product is utilized, every sauce carefully balanced between umami richness and clean acidity. Dishes lean heavily on Aegean seafood and vegetables from their own farm, plated with the kind of architectural beauty that reflects serious fine-dining training.
The atmosphere is serene and gallery-like, with soaring ceilings, suspended trees, and a hand-hammered copper bar that anchors the space like a sculpture. Early seatings offer panoramic sunset views over the Saronic Gulf, while the room maintains a hushed, contemplative energy throughout service. This is a special-occasion destination—elegant without stuffiness, designed for those who appreciate art-forward interiors and immersive culinary experiences.
The brigade operates with polished professionalism, demonstrating strong product knowledge and careful attention to dietary restrictions and pacing preferences. Staff are warm and approachable, balancing formality with genuine Greek hospitality, and wine service from the two-cellar program is confident and well-informed. Some evenings run smoother than others in terms of rhythm between courses, but the team's commitment to the guest experience is consistent.
Kois Associated Architects designed Delta as a multi-sensorial experience, incorporating Greek artist collaborations and winning a 2022 Restaurant & Bar Design Award for its vision. The space feels contemporary and airy, with floor-to-ceiling windows framing the waterfront and a minimalist aesthetic that lets the food and landscape take center stage. Located on the fifth floor, accessed by elevator, the dramatic approach sets the tone for the elevated experience that follows.
These four dimensions are a handful of the attributes we review. The Insider Rating also draws on research the compass does not display — among them the wine programme, the size and quality of the cellar, the location, and how long the house has operated. It is not an average of the scores above.
