Murcia, Spain
An expert assessment built on data, context and gastronomic judgement.
Cabaña Buenavista is Murcia's most celebrated dining destination, where Chef Pablo González-Conejero orchestrates an immersive gastronomic journey across a sprawling estate. Holding 2 Michelin stars and 3 Repsol Soles, the experience unfolds in theatrical stages—appetizers in the garden, groundbreaking dishes in the Living Lab greenhouse where nearly-extinct native species are cultivated in partnership with regional agricultural researchers, and a meticulously paced tasting menu in the striking African-inspired dining hut. This is haute cuisine deeply rooted in Murcian terroir, where global technique meets hyper-local ingredients and every course tells a story of the Mediterranean landscape.
Arrive genuinely hungry—the appetizer stations and Living Lab alone constitute a full meal before you even reach the seated tasting menu, and pacing yourself through eighteen courses requires stamina.
Pablo González-Conejero honed his craft in some of Spain's most influential kitchens, apprenticing under the legendary Juan Mari Arzak in San Sebastián and working at Flanigan in Mallorca and Cuatro Estaciones in Madrid. Since opening Cabaña Buenavista in 2003, he's built the region's most decorated dining destination, earning 2 Michelin stars and 3 Repsol Soles while being named Mejor Cocinero Empresario at the 2024 national hospitality awards. His philosophy centers on radical localism—partnering with IMIDA to cultivate nearly-extinct Murcian species and reimagining traditional regional recipes through contemporary technique, creating a cuisine that's simultaneously deeply rooted and boundary-pushing.
Four dimensions, each assessed independently against the same criteria everywhere we rate.
González-Conejero's cooking is both boldly experimental and fiercely regional, marrying his training under Juan Mari Arzak with an obsessive focus on recovering forgotten Murcian varieties. The Living Lab courses—where vegetables are harvested, prepared, and plated tableside in the greenhouse—represent some of the most innovative vegetable cookery in Spain, while dishes like ground-cooked pumpkin and deer with table-made cheese showcase masterful control of fire and fermentation. Expect around eighteen courses that challenge and delight in equal measure, with some preparations pushing boundaries while others deliver pure, umami-driven satisfaction.
The multi-stage experience creates a sense of theatrical discovery, moving from the tranquil garden through the working greenhouse to the warmly lit main dining room. The ambiance is sophisticated yet unhurried, designed for guests to settle into a nearly four-hour journey with music that shifts between spaces. On busy evenings the energy is celebratory—this is where Murcia marks its special occasions—but the expansive grounds and thoughtful pacing prevent any sense of chaos.
The brigade delivers high-precision hospitality with genuine warmth, seamlessly adapting menus for dietary requirements without being asked and providing detailed context for each course. The sommelier works the room actively, pairing wines by the glass even for guests who skip the full pairing, and González-Conejero himself often appears in the Living Lab to prepare courses tableside. Service strikes the rare balance of being deeply knowledgeable yet never stiff, with staff who understand they're guiding an experience, not just serving plates.
The 12,000-square-meter estate houses an architectural conversation between rustic and refined, anchored by the dramatic African-style thatched hut that serves as the main dining room. The Living Lab greenhouse—a functioning research space where IMIDA collaboration brings nearly-extinct regional plants back into cultivation—is the experience's beating heart, blurring the line between farm, laboratory, and kitchen. Ample parking, manicured gardens, and distinct zones for each course stage create a sense of leaving the everyday world behind.
These four dimensions are a handful of the attributes we review. The Insider Rating also draws on research the compass does not display — among them the wine programme, the size and quality of the cellar, the location, and how long the house has operated. It is not an average of the scores above.
