Dully, Switzerland
An expert assessment built on data, context and gastronomic judgement.
Since 1964, this wood-fired rotisserie in a quiet village above Lake Geneva has built a devoted following for one thing done exceptionally well: poulet à la broche served with unlimited crispy rösti and their legendary tarte à rien, a caramelized cream tart made from the same family recipe for six decades. The Charrière family has owned the property since 1970, maintaining both the auberge and an exceptional wine cellar of 10,000 bottles housed in the adjacent Château de Dully. This is rustic Swiss hospitality at its most sincere—unfussy, generous, and built on the kind of consistency that turns first-time diners into lifelong regulars.
Reserve ahead—this place has earned a loyal following, and walk-ins often face a wait, especially on weekends. Note that the restaurant is closed on Tuesdays and Wednesdays.
Four dimensions, each assessed independently against the same criteria everywhere we rate.
The rotisserie chicken emerges from the wood fire with crackling skin and juicy meat, the kind of Maillard-perfect execution that comes from decades of repetition. Beyond the signature bird, the leg of lamb showcases the same live-fire technique, while the rösti arrives golden and potato-rich, refilled without asking. The tarte à rien—essentially a thin, caramelized custard tart—is deceptively simple and utterly addictive, the sort of dessert that defines a place.
The dining room radiates cozy, village-inn warmth with wooden beams, simple tables, and the convivial hum of locals who've been coming for years. Expect a traditional Swiss atmosphere without pretense—this is a place where the focus stays on the food and the easy pleasure of a well-executed meal. The setting feels timeless, the kind of spot where you settle in for a long, unhurried lunch on a Sunday afternoon.
The team delivers warm, attentive hospitality with a familial ease—plates are cleared promptly, rösti replenished generously, and the owner often circulates to greet guests personally. Service strikes a balance between professional efficiency and genuine friendliness, though the pace assumes you're here to enjoy the ritual, not rush through it. English and French are both spoken comfortably, making international visitors feel at home.
Tucked into the village square of Dully, surrounded by vineyards and rolling countryside, the auberge occupies a charming stone building with rustic appeal and old-world character. Inside, expect simple wooden furnishings, exposed beams, and a no-frills aesthetic that lets the food take center stage. The location offers a peaceful escape from Geneva, just a short drive into wine country with easy access to lakeside walks.
These four dimensions are a handful of the attributes we review. The Insider Rating also draws on research the compass does not display — among them the wine programme, the size and quality of the cellar, the location, and how long the house has operated. It is not an average of the scores above.
